Pasta Salad:
1 box protein pasta ~14oz (396g)
16 oz (453g)chicken breast - seasoned with 1 tsp (3g)
onion, 1 tsp (3g) garlic powder, 1 tsp (3g) Italian seasoning, salt and pepper
1-2 cups (50-100g) romaine lettuce
Dressing:
11/2 cup (360g) 0% Greek yogurt
1/4 cup (60g) lemon juice
1 tsp (3g) garlic powder
1 tsp (3g) oregano
1/4 cup (20g) Parmesan
(optional Parmesan and croutons for topping)
1. Cook pasta until al dente.
2. Cube, season and cook chicken on pan on high heat until internal temp is 165F
3. Combine dressing ingredients.
4. Combine pasta, chicken, and lettuce with dressing and enjoy!
Tips:
Use fresh lemon and Parmesan for best flavor.
Make chicken and dressing while pasta is boiling to save time.
Add croutons right before eating so they don't get soggy.
