🔶 INGREDIENTS
1️⃣ Cake Batter
Maida (all-purpose flour) – ¾ cup
Milk powder (full cream) – ½ cup
Powdered sugar – ½ cup
Ghee (melted & warm) – ¼ cup
Milk – ½ cup (adjust)
Baking powder – 1 tsp
Baking soda – ¼ tsp
Cardamom (elaichi) powder – ½ tsp
Vanilla essence – 1 tsp (optional)
2️⃣ Gulab Jamun Filling
Mini gulab jamuns – 10–12
3️⃣ Sugar–Elaichi Syrup
Sugar – ¾ cup
Water – ½ cu
Cardamom pods – 4–5 (crushed)
-Rose water – ½ tsp (optional)
✍️ 👩🍳 STEP-BY-STEP METHOD
🥣 STEP 1: Prepare Dry Mix
Sieve together:
Maida
Milk powder
Baking powder
Baking soda
👉 Sieving = soft cake texture.
🧈 STEP 2: Prepare Wet Mix
1. In a bowl add:
- Powdered sugar
- Warm melted ghee
2. Whisk until slightly creamy.
3. Add:
- Milk
- Elaichi powder
- Vanilla essence
Mix well.
🌀 STEP 3: Make Smooth Batter
1. Add dry ingredients to wet mixture in 2 batches.
2. Fold gently.
3. Batter should be:
- Smooth
- Medium thick
- Flowing ribbon-like
❌ Do NOT overmix.
🍰 STEP 4: Assemble Cake
1. Grease 6–7 inch cake tin with ghee.
2. Pour half batter.
3. Arrange gulab jamuns evenly (press lightly).
4. Cover with remaining batter.
5. Sprinkle nuts if desired.
🔥 STEP 5: Bake
✍️ Oven
Preheat 170°C
Bake 40–45 minutes
✍️ Pressure Cooker
Preheat empty cooker 10 min
Bake on low flame 45–50 min
✔ Toothpick should come out clean.
🍯 STEP 6: Make Sugar–Elaichi Syrup
1. Heat sugar + water.
2. Add crushed elaichi.
3. Boil till 1-string consistency.
4. Switch off flame.
5. Add rose water (optional).
6. Syrup should be *warm, not hot*.
💧 STEP 7: Syrup Soaking (MOST IMPORTANT)
1. Let cake rest 10 minutes after baking.
2. Poke holes with skewer.
3. Slowly pour warm syrup evenly.
4. Allow cake to absorb naturally.
⚠️ Do NOT pour all at once.
✨ STEP 8: Final Garnish
Chopped pistachios
Dried rose petals
