The Best Strawberry Olive Oil Upside Down Cake!!

Strawberry upside-down cake that actually works, no mushy fruit, no weird texture, just a really beautiful cake.
The secret? Roasting the strawberries first. It concentrates the flavor and draws out the excess moisture that makes a lot of strawberry cakes a disaster.
This is an olive oil cake, which means it stays moist and tender at room temperature and it’s the perfect anytime cake!
RECIPE
Roasted Strawberries: Roast at 300F / 150C for 30 minutes. Strain and reserve the juice for the glaze.
1 lb (450g) fresh strawberries, washed and sliced
1/4 cup (85g) honey
1 tbsp (14g) olive oil
Cake Batter: Whisk together wet ingredients below
1/2 cup (120g) olive oil
1/2 cup (120g) yogurt or sour cream
1/2 cup (110g) whole milk
2 large eggs (100g)
1 tbsp vanilla bean paste
Cake Batter: Rub the zest into the sugar until fragrant, then whisk into wet ingredients
1 1/4 cups (240g) granulated sugar
Zest of 1 lemon (about 1 1/2 tsp)
Cake Batter: Fold in the dry ingredients with a spatula until there are no more streaks of flour
2 cups + 2 tbsp (260g) all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp Diamond Crystal kosher salt
Assembly
Line a 9-inch cake tin with baking paper and oil well
Sprinkle 1/4 cup (50g) turbinado sugar across the bottom and sides
Add roasted strawberries in a flat layer
Pour batter on top and spread to edges
Bake at 350F / 175C for 40-50 minutes until golden and center temp reads 200F / 93C
Strawberry Glaze
Reserved roasted strawberry juice + powdered sugar
Start with 2 tbsp powdered sugar per 1 tbsp juice, adjust to a pourable consistency
Let cake cool 20 minutes before inverting. Cool fully before glazing.
