Tofu Nway (Shan Tofu Noodles) – a Burmese comfort food made with silky chickpea tofu, rice noodles, chicken curry, and chili oil. The star is homemade tofu made from gram flour (chickpea flour) — cooked gently until soft and silky, then served over rice noodles.
