Easy Lemon Poppy Seed Pound Cake made with oat flour. It's easy, delicious, and still moist after two days!
Hello everyone! Today we have a recipe I've been craving for a while. I wasn't a big fan of yellow lemons while growing up since they weren't common in my country. Since I moved out, the flavor has grown on me.
I thought the gluten-free orange cake was easy, but THIS one! This is by far the easiest, most delicious, and fairly good-looking cake you can make while bored at home and craving something sweet.
You don't even have to find fancy flours, just use gluten-free oat flour OR make your own!
I have a few additional tips for you:
What should you expect from this recipe and what can you do to improve it?
It's a delicious lemon pound cake. It will taste better the next day, as most cakes with citric zest do. You can overmix this, but it's quite hard to do so, that's the reason why I didn't add any notes about it in the recipe.
1) The cake is delicate. I won't say it's "crumbly" because it doesn't give a dry feeling. It is moist and delicious, but it's true that (if you over-bake it) it will become even more delicate. Start checking for doneness at 30min to avoid that.
2) I would pretty much suggest adding 1/8 tsp of xanthan gum if you don't enjoy the delicate feeling. It's just a little bit of gum, but it will make a remarkable difference. I didn't think it was necessary since the cake was for us to enjoy.
3) I've made this cake with syrup (lemon syrup) and I don't think it absorbs it well. I would say it makes the cake mushy.

I'm using an 8 x 4 x 2 1/2 in (4 cups) / or 20 x 10 x 6 cm (948 ml) baking pan ♡

1) Estoy usando un molde de 8 x 4 x 2 1/2 in (4 tazas) / or 20 x 10 x 6 cm (948 ml)
2) Agregar 1/8 de cucharadita de goma xántica ayuda a mejorar la textura para hacerlo menos delicado, y que se desmorone menos. En mi caso, no le agregué ya que no me pareció que le haga falta para consumo en casa.
3) Lo he hecho agregándole syrup de limón, y no siento que el pastel lo absorba bien. Le da una textura pastosa.
