🌽 Tandoori Bhutta | Spiced Grilled Corn on the Cob
Enjoy the smoky, spicy flavours of street-style Tandoori Bhutta, made healthier and tastier at home with a rich curd-based marinade and aromatic spices!
🔸 Ingredients:
3 medium-sized corn on the cob (bhutta)
2 tbsp thick curd (yogurt)
1 tsp red chilli powder
1 tsp Kashmiri red chilli powder (for vibrant colour)
1 tsp chaat masala
1 tsp roasted cumin powder
1 tsp black salt
Salt to taste
1 tsp ginger-garlic paste
1 tbsp lemon juice
1 tbsp olive oil (or mustard oil for a traditional twist)
Fresh coriander – for garnish
🔸 Method of Preparation:
Roast the corn:
Begin by roasting the corn on an open flame or grill until lightly charred on all sides. Set aside.
Make the tandoori marinade:
In a mixing bowl, combine curd, red chilli powder, Kashmiri chilli powder, chaat masala, roasted cumin powder, black salt, salt, ginger-garlic paste, lemon juice, and olive oil. Mix well to form a smooth marinade.
Coat the roasted corn:
Brush the tandoori marinade generously over the charred corn while it's still warm. Make sure every corner is covered.
Grill again for extra flavor (optional):
Place the coated corn back on the grill or open flame for another 1–2 minutes to give the masala a slightly smoky finish.
Garnish and serve:
Sprinkle with fresh coriander leaves, add a dash of chaat masala or lemon juice if desired, and serve hot with lemon wedges on the side.
