Fwaregh are one of Lebanon’s most traditional and deeply rooted dishes, born from village life, seasonality, and respect for food. In the past, animals were slaughtered only on major occasions such as weddings, religious feasts, harvest celebrations, or when hosting large gatherings. Meat was precious, and nothing was wasted.
From this philosophy came fwaregh: a dish made by carefully cleaning and stuffing the intestines with rice, spices, and minced meat. Every part of the animal was used with purpose, reflecting a way of life based on sustainability, generosity, and collective cooking.
In Lebanese villages, preparing fwaregh was a communal ritual. Families and neighbors gathered to clean, stuff, and cook together, passing down techniques and knowledge from one generation to the next. This dish is not only food, but a living memory of how our ancestors cooked, celebrated, and honored the land.
