AUBERGINE MASSALA. EGGPLANT CURRY. BOULANGER MASALA.
INGREDIENTS:
3 eggplants
1 tsp salt
1 tbsp massala/masala (curry powder)
1 onion
2 garlic cloves
PREPARATION:
Mash the onion, garlic with a little salt to a paste.
Cut the eggplants as shown in the video.
Saute the onion, garlic and salt paste in hot oil.
Add the salt, massala, the eggplant and mix.
Add some oil and hot water around the edges.
Cover and stir every so often.
Let simmer till soft.
