1. Thicker Steaks Are Better
2. Grades: Prime, Choice, Select
3. Dry Brine with Salt Overnight
4. Searing with Stainless Steal NOT Nonstick
5. Use High Smoke Point Oil
6. Apply Pressure for Initial Sear
7. Adjust heat by Watching Smoke
8. Bast Hot Oil to Sear Bald Spots
9. Butter Bast to Infuse More Flavor
10. Wait for Butter to Foam then Bast
11. Finish Thick Steaks in the Oven
12. Make Pan Sauce For Steak
13. Rest Your Steaks Give Better Results
14. Cut Your Steak Properly

Bone In Ribeye Recipe:
1.5 - 2.5 lbs Bone In Ribeye
Salt
1/2 Shallot, Cut into planks
1-2 Cloves Garlic
Black Pepper
2 tbs Avocado Oil
3 tbs Unsalted Butter
Red Wine Pan Sauce Recipe:
1/2 Shallot, Minced
85g or 1/3 cup Red Wine (I used a CHEAT Cabernet Sauvignon)
15g or 1 tbs Dijon Mustard
170g or 3/4 Cup Chicken Stock
3 tbs Unsalted Butter
