🥔 Ingredients / सामग्री
2 medium potatoes (thinly sliced) — 2 मध्यम आकार के आलू (पतले स्लाइस)
1 cup gram flour (besan) — 1 कप बेसन
½ cup rice flour — ½ कप चावल का आटा
1 tsp crushed red chili — 1 छोटा चम्मच कुटी लाल मिर्च
1 tsp crushed coriander seeds — 1 छोटा चम्मच कुटी धनिया
½ tsp carom seeds (ajwain) — ½ छोटा चम्मच अजवाइन
½ tsp red chili powder — ½ छोटा चम्मच लाल मिर्च पाउडर
½ tsp turmeric powder — ½ छोटा चम्मच हल्दी पाउडर
Salt to taste — स्वादानुसार नमक
1 tbsp hot oil — 1 बड़ा चम्मच गरम तेल
Water as needed — आवश्यकतानुसार पानी
Oil for frying — तलने के लिए तेल
👩🍳 Method / विधि
Slice the potatoes thin and evenly — आलू को पतले और बराबर स्लाइस में काट लें।
Soak in cold water for 5 minutes — 5 मिनट ठंडे पानी में भिगो दें।
Remove and dry well — निकालकर अच्छे से सुखा लें।
Mix gram flour and rice flour in a bowl — एक कटोरी में बेसन और चावल का आटा मिलाएं।
Add all spices and salt — सभी मसाले और नमक डालें।
Add water gradually to make smooth batter — थोड़ा-थोड़ा पानी डालकर स्मूथ बैटर बनाएं।
Add hot oil and mix well — गरम तेल डालकर अच्छे से मिलाएं।
Dip potato slices in batter and fry — आलू को बैटर में डुबोकर तेल में डालें।
Fry until golden and crispy — सुनहरा और कुरकुरा होने तक तलें।
Serve hot with chutney — गरमा-गरम चटनी के साथ परोसें।
