As we settle into our lives in the Sierra Foothills we begin exploring the beauty of our new home during the first few weeks of winter. Living on top of a mountain ridge the fog rolls in encapsulating us in a sea of white. During these misty days it is the perfect time for olive picking and canning. I have included more details about the olive canning process below and I hope you enjoy this video!
Olive Canning Process & Recipe:
1) Score each olive to the pit, this will allow the bitter taste to seep out while the olives are soaking
2) Let the olives soak in water for 14-20 days and change the water every day
3) To create the brine, boil water and for every two cups of water add 1/2 cup of vinegar and 2 tbsp of salt.
4) Make sure to either boil or machine wash the glass olive jars before adding the olives
5) Add the olives with the herbs of your choosing. We used rosemary, thyme, garlic, and some peppers.
6) Add the brine mixture to each jar and top it off with olive oil to seal
7) Add the lid and let the olives marinate for 2 months before eating.
