RECIPE IN ENGLISH :-
PURI
INGREDIENTS
SUJI/RAVA FLOUR – 2 CUPS
WHEAT FLOUR – 2 TBSP
SALT – 1 TSP
WATER – 1 CUP
HOW TO MAKE :
1. MIXED RAVA FLOUR , WHEAT FLOUR AND SALT. THEN ADD WATER BY STAGE, SO THAT THE WATER IS NOT TOO MUCH OR TOO LESS, THEN KNEAD THE FLOUR FOR ATLEAST 3-5 MINUTES AND COVER THE DOUGH USING A WET CLOTH AND LEAVE FOR 30 MINUTES.
2. AFTER 30 MINUTES, REMOVE THE WET CLOTH THEN START TO DIVIDE THE DOUGH INTO FEW BALLS.
3. PUT SOME WHEAT FLOUR ON THE ROLLING BOARD AND SPREAD IT ALL OVER THE BOARD SO THAT THE DOUGH WILL NOT STICK TO IT. THEN, TAKE A BALL OF DOUGH AND START TO ROLL IT UNTIL IT BECOMES FLAT AND THIN.
4.THEN, YOU CAN USE ROUND CUTTERS OR ROUND MOLD TO MAKE A SMALL CIRCLE.
5.IF YOU TAKE A LONG TIME TO FRY, COVER THE DOUGH USING A WET CLOTH. SO THAT THE DOUGH REMAINS SOFT.
6. USE MEDIUM HEAT AND START TO FRY THE PURI BY PUTTING IT ONE BY ONE THEN PRESS THE PURI UNTIL IT BECOMES LIKE A BALLONS. FRY UNTIL IT BECOME BROWNISH AND CRISPY.
7. AND TAKE IT OUT AND FINISH !!!
STUFFING : POTATO MIXED
INGREDIENTS:
POTATO
ONION – 1
CORIANDER LEAVES
CHILLI POWDER – 1 TSP
CHAAT MASALA – 1 TBSP
CUMIN POWDER – ½ TSP
CORIANDER POWDER – ½ TSP
SALT TO TASTE
HOW TO MAKE :
1. BOIL THE POTATOES WITH A PINCH OF SALT. THEN, SMASH THE BOILED POTATOES AND KEEP ASIDE.
2. CUT THE ONION INTO SMALL SLICE AND MIX IT WITH THE MASHED POTATOES.
3. THEN, ADD CORIANDER LEAVES AND ALL THE SPICES LISTED ABOVE AND MIX WELL.
4. POTATO MIXED IS DONEE!!
SWEET CHUTNEY :
INGREDIENTS:
TAMARIND WATER (PER SOUR TASTE)
PALM SUGAR (MELTED)(PER SWEET TASTE)
CHILI POWDER – ½ TSP
CUMIN POWDER – ½ TSP
CHAAT MASALA – ½ TSP
GINGER POWDER – 1 TSP
SALT TO TASTE
HOW TO MAKE :
1. IN A BOWL ADD TAMARIND WATER, AND MELTED PALM SUGAR, THEN ADD CHILLI POWDER, CUMIN POWDER, CHAAT MASALA, GINGER POWDER AND SALT FOR TASTE. MIXED ALL THE INGREDIENT THEN ITS READY !!!!
PAANI :
INGREDIENTS:
CORIANDER LEAVES – 1 CUP
PUDINA LEAVES – 2 CUPS
GINGER - 1 INCH
BIRD’S EYE CHILLI – 3
PALM SUGAR - 2 TBSP
TAMARIND WATER - 4 TBSP
CHILLI POWDER – 1 TSP
CHAAT MASALA – 1 TSP
CORIANDER POWDER – ½ TSP
CUMIN POWDER – 1 TSP
LEMON JUICE – 1 TBSP
SALT TO TASTE
COLD WATER – 2 CUPS
HOW TO MAKE :
1. GRIND CORIANDER LEAVES, PUDINA LEAVES, GINGER, BIRD’S EYE CHILLI, PALM SUGAR, TAMARIND WATER AND A LITTLE BIT OF WATER.
2. SIEVE THE JUICE (PAANI) AND YOU CAN DO THIS THROUGH A SIEVE USING SPOON TO HELP PRESS THE JUICE OUT.
3. THEN, ADD ALL THE SPICES, LEMON JUICE AND COLD WATER AS MENTIONED ABOVE.
4. THEN, IT'S READY!!!
