Recipe (Serves 6 to 8):-
Filling:
2 medium Onions, finely diced
3 medium Carrots, finely diced
2 medium Celery stalks, finely diced
3 large Garlic cloves, finely chopped
2 1/2 lb (1.2 kg) Minced beef
2 cups Frozen peas
1 pinch of Rosemary, dried
2 large pinches of Thyme, dried
Salt and Pepper
1/4 cup (30 g) Plain flour
1/4 cup (60 g) Tomato paste
1 1/2 cup (355 ml) Red wine
3 cups (710 ml) Beef stock
3 tbsp. Worcestershire Sauce
2 Bay leaves, dried
Mashed Potatoes
2 lb Russet potatoes
1 oz (30 g) Unsalted butter
Salt and White pepper
1/4 cup (60 g) Heavy cream
Parmesan, Grated
