INGREDIENTS
CAKE BATTER
• 6 Egg Yolks
• 225 Cream Cheese
• 60 grams Granulated Sugar
• 120 ml Heavy Cream
• 60 grams Unsalted Butter
• 60 grams Cake Flour
• 2 tbsp Cornstarch
• 1 tsp Pandan Extract
MERINGUE
• 6 Egg Whites
• 1/4 tsp Cream of Tartar
• 60 grams Powdered Sugar
INSTRUCTIONS
• Preheat the oven to 350°F.
• Grease a 9-inch cake pan with butter, and line the bottom and sides with parchment paper.
• Combine and sift cake flour and cornstarch in a mixing bowl. Set aside.
• In a pot, combine and melt, over a warm bath, unsalted butter, heavy cream, cream cheese, and granulated sugar into a smooth batter.
• Add egg yolks and whisk with a hand mixer. Be careful not to scramble the egg yolks.
• Add pandan extract and continue whisking until the batter is fully incorporated.
• Remove from heat and add cake flour and cornstarch mixture. Fold gently with a silicon spatula.
• In a separate mixing bowl, whisk egg whites with a hand mixer at medium speed until the eggs become foamy. Add cream of tartar and slowly add powdered sugar, about 20 grams at a time, while the mixer runs. Whisk until soft peaks form.
• Combine the egg white mixture into the cake batter one-third at a time. Fold gently until they are fully incorporated, but do not overmix.
• Pour the complete batter into a cake pan. Tap the pan to release any air bubbles.
• Place the cake pan over a rectangular water bath and bake for 20 minutes. Reduce the oven temperature to 300°F and continue to bake for another 30 to 40 minutes.
• Leave the oven door closed and turn off the oven for 10 minutes.
• Remove the cake from the oven and gently remove the cake from the pan.
