INGREDIENTS
Pork Belly - 700g
Dried mushrooms (Soaked and chopped finely) - 24 pieces
Dried oysters (Chopped finely) - 1 piece
Chestnuts (Soaked overnight) - 24 pieces
Salted egg yolk (Halved) - 6 pieces
Glutinous rice (Soaked for an hour) - 600g
Dried shrimps - 150g
Bamboo leaves (Washed and soaked overnight)
Pandan leaves (Washed)
Shallots
Garlics
Five spice powder
Cinnamon powder
Coriander powder
Pepper
Dark soya sauce
Cognac / Wine
Honey
Sugar
Salt
FRY PORK BELLY:
1. Rub salt over pork belly, then wash the salt off.
2. Boil water, scald meat, then cut into small pieces.
3. Sauté shallots and garlics, then fry pork belly
4. Season with salt, wine, honey, pepper, five spice powders, cinnamon powder and coriander powder
5. Use dark soya sauce to add colour; set aside
FRY MUSHROOMS:
1. Sauté shallots and garlics, fry dried oysters till fragrant
2. Add coriander powder, five spice powder and cinnamon powder
3. Fry mushrooms and season with salt; set aside
FRY CHESTNUTS:
1. Cook chestnuts in boiling water till soft
2. Sauté shallots and garlics, fry chestnuts; set aside
FRY GLUTIONOUS RICE
1. Sauté shallots and garlics, fry dried shrimps
2. Fry glutinous rice, season with salt
3. Colour with dark soya sauce and mix evenly
WRAPPING
1. Soak bamboo leaves till soft
2. Use two bamboo leaves, place coarse sides back to back and fold the leaves into a cone.
3. Fill up with ingredients and top up with more rice till it reaches the brim of the cone.
4. Wrap dumpling tightly and tie with raffia string.
5. Boil dumplings with pandan leaves for two hours. Alternatively, use pressure cooker to cook for 40 minutes.
