🟢 INGREDIENTS – CHICKEN BIRYANI
(For ½ kg Chicken)
🟡 HOME-MADE BIRYANI MASALA POWDER
Whole Spices:
Cinnamon sticks – 2 pieces
Cloves – 2 pieces
Green cardamom – 8 to 10 pods
Star anise – 4 pieces
Marathi moggu (Kapok buds) – 4 to 5 pieces
Nutmeg – 1 small piece
Bay leaves – 3 leaves
Seeds & Aromatics:
Black pepper – 2 teaspoons
Cumin seeds – 1 teaspoon
Fennel seeds – 1 teaspoon
Coriander seeds – 2 teaspoons
Dry Chillies & Special Spices:
Guntur dry red chillies – 8 pieces
Black stone flower (Kalpasi / Dagad phool) – 3 pieces
🟢 INGREDIENTS – GREEN PASTE
Ginger – 2 pieces (about 3 inches each)
Garlic – 15 to 20 cloves
Green chillies – 8 to 9
Mint leaves – 1 handful
Coriander leaves (Cilantro) – 1 handful
Fenugreek leaves (Methi leaves) – 1 handful or 1 cup
🟢 INGREDIENTS – FOR FRYING (BIRYANI BASE)
Onions – 2 medium, thinly sliced
Tomato – 1 medium, chopped
Kasuri methi (Dried fenugreek leaves) – a few
Turmeric powder – a pinch
Salt – to taste
🟢 RICE USED
Basmati rice – 2 glasses (cups)
🟢 INGREDIENTS – CHICKEN KEBAB
(For ½ kg Chicken)
Chicken – ½ kg
Maida (All-purpose flour) – 3 tablespoons
Cornflour – 2 tablespoons
Rice flour – 1 tablespoon
Egg – 1
Red chilli powder – 1 tablespoon
Coriander powder – ½ tablespoon
Garam masala powder – ½ tablespoon
Pepper powder – ¼ tablespoon
Turmeric powder – ½ teaspoon
Ginger garlic paste – 1 tablespoon
Lemon juice – 1
Salt – to taste
