A gluten-free take on classic comfort food, using rolled oats instead of breadcrumbs for the meatloaf, and a side of redskin potatoes with a bold horseradish and sour cream topping. Plus carb counting at the end for type 1 diabetics.
Note – this is a gluten-free meal.
This is a low sodium meal
Ingredients:
Ground beef – 2 lbs
Eggs – 2
Ketchup – 1/4 cup
Jarlic – 1 Tbsp
Onion – 1/4, diced
Parmesan cheese – 1/4 cup, shredded
Milk – 2 Tbsp
Rolled Oats (GF) – 1/2 to 1 cup
Onion Powder
Garlic powder
Salt & pepper
Italian seasoning
Sour cream – 1/2 cup
Horseradish – 1/2 tsp (to taste)
Dried parsely – 1/2 tsp
Jarlic – 1/2 tsp (optional)
Redskin potatoes
If you adjust amounts based on portions desired, you will need to calibrate carbs accordingly.
