Cooking a Neapolitan Margherita in an Ooni Koda 12.
This is my usual process:
Launching and turning heat down to stop the top burning.
Watching the side nearest the flame. Once it starts to darken nicely, remove and rotate.
Back in and repeat.
Remove and rotate as required until it’s finished nicely.
In this case letting the top cook without overcooking the base by using the peel, but I’ve got the flame real low so to not burn the top so the base continues to cook throughout.
