Black Sesame Sourdough Recipe
Nutty, dramatic crumb with pops of sesame in every slice. Perfect for toast or sandwiches. Overnight method.
📋 Ingredients (makes 1 large loaf)
Preferment (mix the night before):
30 g active sourdough starter
40 g water
70 g bread flour
Black Sesame Soak:
100 g black sesame seeds
200 ml boiling water (soak 1-2 hours, drain excess)
Main Dough:
450 g bread flour
50 g whole wheat flour
330 g water (divided)
14 g salt
50 g reserved water (for salt)
👩🍳 Method (see video timestamps):
Mix preferment, autolyse flours with 280g water
Soak sesame seeds during autolyse
Add salt + 50g water, then drained sesame
Stretch & fold 3x, laminate, preshape, cold proof
Bake from cold (450°F/230°C, steam first 20 min)
