In this video we explore Ball's "Homemade Pie Filling in 3 Easy Steps". No Clear-Jel, no problem...You do not need to keep it on hand to make home canned pie filling. Add bourbon to take your peach pie to an all new level.
For each quart jar of pie filling you will need:
~ 2lbs. peaches (do not use white flesh)
1/2 c. sugar
2 T. bottled lemon juice
1/2 t. cinnamon
For 3 quarts of Peach Bourbon Pie Filling I used:
6 1/2 lbs. peaches
1 1/2 c. sugar
6 T. bottled lemon juice
1 1/2 t. cinnamon
1/4 t. nutmeg
3/4 c. Maker's Mark bourbon (optional)/Peach Schnapp's is equally delicious
*To treat peach slices to prevent browning, apply Ball® Fruit-Fresh® Produce Protector according to the manufacturer's instructions or submerge cut apples in a mixture of 1/4 cup lemon juice and 4 cups water.
Ladle hot pie filling into hot quart jars leaving a 1/2" headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 30 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

To make Peach Bourbon Pie: drain 1/3 c. of liquid from a quart jar into a medium bowl, whisk in 3 T. cornstarch and 1/8 t. salt until smooth, gently stir in remaining jar ingredients to blend. Pour into prepared pie crust and bake on 450* for 15 minutes, reduce heat to 350 and bake 25-30 minutes more, until hot and bubbly.
