Rice Cake Recipe
Ingredients:
500 gr jasmine rice (any rice would do but this recipe is for a softer texture rice)
approximately 20 coconut leaf casing
water to boil
Wash and soak the rice overnight to soften, drain the water.
Insert about 1/3rd of the rice into the pockets.
Using a large enamel pot insert all the pockets and add enough water to cover. Boil for 2 hours. Add more water if necessary to keep the pocket below the surface. If using pressure cooker one hour would be sufficient. The pocket will become hard once it is done. Drain the water and hang the pockets to dry.
To serve, cut the pocket diagonally, and pour the rice cake into the plate. Serve with beef rendang ( • Beef rendang recipe Indonesia ) and some vegetable curry.
