Tender beef brisket slow-braised with cherries, red wine, and warm spices — a cozy dish that’s rich, slightly sweet, and perfect for a special dinner.
Ingredients:
2 lb beef brisket
2 tsp olive oil
1 large onion, sliced
2 garlic cloves, minced
2/3 cup beef broth
2/3 cup red wine
2/3 cup pitted cherries (fresh or frozen)
1 ½ tbsp balsamic vinegar (or apple cider vinegar)
1 ½ tbsp honey or brown sugar
½ tsp smoked paprika
½ tsp dried thyme (or 1 sprig fresh thyme)
1 bay leaf
Salt & black pepper, to taste
Instructions:
1. Prep the Brisket
Season brisket with salt, pepper, and smoked paprika.
Heat olive oil in a Dutch oven over medium-high heat.
Sear brisket on all sides until golden. Remove and set aside.
2. Build the Base
In the same pot, sauté onion until golden.
Add garlic and cook for 1 minute.
3. Deglaze with Wine
Pour in red wine, scraping up browned bits.
Let it simmer for 2–3 minutes to reduce slightly.
4. Add Flavor
Stir in cherries, balsamic vinegar, honey, thyme, bay leaf, and beef broth.
Bring to a gentle simmer.
5. Slow Cook
Return brisket to the pot, cover tightly.
Bake at 325°F for 3.5–4.5 hours, until fork tender.
6. Finish & Serve
Rest brisket 10 minutes before slicing.
Simmer sauce on stove until thickened into a cherry-wine glaze.
Spoon over brisket and serve with mashed potatoes or roasted veggies.
