Archaeologists digging beneath a medieval latrine in Münster, Germany, found something they could not explain. Layer after layer of human waste, spanning 300 years, all containing the same four ingredients: hops, bog myrtle, caraway and juniper. The same combination, in the same proportions, century after century.
They brought the samples to a local brewer named Philip Overberg. He looked at the results and immediately knew what they were seeing. These were the remains of a drink that had passed through the bodies of medieval Germans for three centuries. The ingredients matched records from the oldest surviving book in the Münster Gruthaus, the city's official herb-mixing house for beer.
