3-4 oz of soda water

Lime Vault:
2 oz Gin
1 oz Velvet Falernum
.75 oz Lime Oleo Saccharum
.75 oz lime juice
Top with Sour Lime Foam

Lime Oleo Saccharum
50 g lime peels (pith removed)
75 g sugar
Let sit until sugar dissolves
2 oz boiling water
Strain

Sour Lime Foam:
100 g lime juice
75 g filtered water
25 g sugar
pinch of salt
1 g Methylcellulose
.5 g Xanthan Gum
Blend
Add to Isi Whipper
Charge with NO2 cartridge
Let cool in fridge
