One Pot Hainan Chicken Recipe
Cook (One Pot):
-Season chicken: Pat 4 chicken thighs dry. Toss with turmeric (1 tbsp), sesame oil (1 tbsp), salt (½ tbsp).
-Build the pot: Add 2–3 cups rice to your pot. Pour in 4 cups Thai lemongrass stock. Add 1-inch ginger (sliced) + green onion stalks (2–3).
-Nestle chicken: Place the seasoned thighs on top of the rice (skin-side up if using skin-on).
-Simmer: Bring to a gentle boil, then cover + lower to a simmer until rice is tender and chicken is cooked through (about 20–30 min, depending on thigh size + bone-in).
-Rest + fluff: Turn off heat, rest 5 min, fluff rice, slice chicken.
Ginger Scallion Sauce (mix):
6 garlic cloves (minced)
½-inch ginger (minced)
Scallion (finely chopped)
2 tbsp neutral oil (warm it if you want extra aroma)
Chili Sauce (mix):
4 tbsp sambal
1 tbsp brown sugar
Juice of 1 lime
6 garlic cloves (minced)
½-inch ginger (minced)
Serve: Spoon that fragrant rice, top with chicken, and drizzle or dip with both sauces. ✨
(Tip: If your rice seems a little tight, splash in extra stock a few tablespoons at a time and steam 3–5 more minutes.)
