Kam Heong Chicken 甘香鸡
Is a flavorful Malaysian Chinese dish that’s spicy, savory, aromatic, and packed with umami. “Kam Heong” means “Golden Fragrance” in Cantonese, and it’s known for its signature blend of dried shrimp, curry leaves, and chili.
Chicken Marinade | 鸡肉腌料:
1 kg chicken (4 pieces boneless thigh) | 1 公斤鸡肉(4 块去骨鸡腿)
2 tbsp soy sauce | 2 汤匙酱油
1 1/2 tbsp oyster sauce | 1 1/2 汤匙蚝油
1 tbsp curry powder | 1 汤匙咖喱粉
3 tbsp tapioca starch | 3 汤匙木薯粉
A pinch of white pepper | 少许白胡椒粉
1 egg | 1 颗鸡蛋
1 tsp multi-purpose seasoning | 1 茶匙万能调味粉
Marinate at least 1 hour | 腌制至少 1 小时
Kam Heong Sauce | 金香酱料:
2 tbsp dried shrimp | 2 汤匙虾米
4 cloves garlic (minced) | 4 瓣蒜(切碎)
6 shallots (sliced) | 6 粒小葱头(切片)
4 bird’s eye chilies | 4 条小辣椒
2 stalks curry leaves | 2 枝咖喱叶
1/2 tbsp curry powder | 1/2 汤匙咖喱粉
2 tbsp oyster sauce | 2 汤匙蚝油
1 tbsp dark soy sauce | 1 汤匙老抽
1 tsp soy sauce | 1 茶匙酱油
1 tsp sugar | 1 茶匙白糖
Some water (to adjust consistency) | 适量清水(调节浓稠度)
3 tbsp cooking oil | 3 汤匙食用油
