*sorry for audio difficulties, mic trouble* Back with another fun recipe....Spinach Tortillas! I finally pulled together a recipe that I like, and I would like to share it with you. There are many different ways to make these, but I hope this recipe will be your go-to favorite! So let's have some fun making these! Ingredients:
1 1/2 cups Unbleached Flour
1 tsp Baking Powder
3/4 tsp Sea Salt
1 tbsp 1/2 Olive Oil
1 10 oz. frozen chopped Spinach, BUT you only need 1/4 cup for the recipe. Make sure it's cooked, and squeezed of all Water
1/2 very warm Water (but not hot)
Instructions:
First, put 1 cup and 1/2 cup Flour in a medium bowl
Next, add 1 tsp Baking Powder, 3/4 tsp Salt, and mix with a whisk. Now add the 1 tbsp and 1/2 tsp Olive oil and mix until slightly combined forming small crumbles. Add the 1/4 cup Spinach, and 1/2 cup warm Water to a Nutribullet and blend just until combined (just a few seconds). Immediately pour purée into dry ingredients bowl and mix well until it forms into a dough. After, put the dough on the counter and knead with some flour. If too sticky just add a little bit of flour on the counter. Knead about 1 minute and then put into a bowl and cover with a plate for 15 minutes to rest. Preheat your comal (Tortilla Griddle) on to medium heat. Next, form about 8 balls from your dough, and set aside. Now we're ready to roll the tortillas out with a little bit of flour sprinkled on the counter if needed. After you've rolled it out, place it onto your preheated comal and watch for small bubbles pop up roughly about 15 seconds (temperatures vary so just keep an eye on it), then flip the tortilla over onto the other side. Do that side about 15 seconds also. When done, place the tortilla into a bowl with a cheesecloth or wax paper. It's done!!! Definitely, enjoy the fresh delicious tortilla with some Butter, make a cheese quesadilla, maybe a bean and cheese burrito or even a Spinach Wrap (WHICH WILL ACTUALLY BE MY NEXT SHOW SO STAY TUNED). Congrats, you did it! Now, store the rest of the tortillas in a covered large baggie for up to 4 days (up to 7 if refrigerated). You can reheat on the burner or in the microwave.
