This is how they make jaggery in rural Punjab, India. Sugarcane is crushed, and the juice poured into a large container. The juice is boiled in three separate containers, until it reaches the right consistency. The dense fluid is then cooled off in a large wooden tray, and formed into balls for sale.
The dried out sugarcane husk is used as a fuel in the process.
