Payar Thoran (Long Beans Stir-fry) Recipe
This version uses fresh long beans, which are high in fiber and a staple in Kerala cuisine.
Ingredients:
250 grams cups Long Beans/Payar (finely chopped)
1/2 cup Grated Coconut (fresh or frozen)
1 small onion
2-3 Green Chilies
1/4 tsp Cumin Seeds (Jeera)
1/4 tsp Turmeric Powder
1/4 tsp Mustard Seeds
1 sprig Curry Leaves
1-2 tbsp Oil
1/4 chilli powder
Salt to taste
Water (as needed)
Method
1.Heat oil in a pan (preferably a kadhai) over medium heat. Add mustard seeds,jeera seeds and let them crackle.
2. Add onion, curry leaves, and green chilies, and fry for a few seconds.
,3. Add the chopped long beans, turmeric powder,red chilli powder, and salt. Stir-fry for 1-2 minutes
4. Add water, cover the pan with a lid, and cook on low-medium heat for 10 -15 minutes until the beans are tender.
5. Add coconut to the cooked beans, stir well, and cook for another 2-3 minutes on low heat until the raw smell of coconut is gone and the mixture is dry.
Serve hot with rice.
