Vegetarian Mexican Stuffed Peppers
Ingredients
3 Bell peppers
2 ½ cups cooked quinoa
1 can of black beans (15 oz)
1 ½ cups salsa
½ cup chopped onion
1 cup diced raw zucchini
1 ¼ cups shredded Mexican cheese blend plus ¼ cup for topping
¼ teaspoon black pepper
¼ teaspoon kosher salt
1 ½ teaspoons chili powder
½ teaspoon cumin
¾ teaspoon garlic powder
¼ cup chopped fresh cilantro (optional)
Directions
Preheat oven to 350. Prepare quinoa as per directions on package. Cut peppers Length wise and remove seeds. Place face down in a microwave safe bowl with ¼ cup of water and microwave for 5 minutes to get them a little soft. In a large bowl mix quinoa, beans, salsa, 1 ¼ cup of cheese, zucchini, onions, cilantro and spices. Taste for seasoning. Fill the microwave peppers and top with remaining ¼ cup of cheese. Bake at 350 for 30-35 minutes. Enjoy.
