Ingredients (for 8 cookies / 4 sandwiches)
• 100 g dark chocolate (70%)
• 30 g butter
• 1 egg
• 90 g sugar
• 90 g flour
• ½ tsp baking powder
• 1.5 g vanilla sugar or vanilla extract
• A pinch of salt
Cream filling
• 150 g cream cheese
• 70 g butter
• 30 g powdered sugar
Instructions
Combine the chocolate and butter and melt them in a water bath or in the microwave. If using a microwave, heat in short 10–15 second bursts, stirring each time, until smooth. Set aside and let it cool slightly at room temperature.
Beat the egg with sugar until the mixture becomes light and fluffy. Add the sugar gradually in 2–3 stages. Pour in the cooled chocolate mixture and mix on low speed until smooth.
Add the sifted flour, vanilla sugar, baking powder, and salt. Mix until fully combined. Cover the dough with plastic wrap and refrigerate for 30 minutes to make it less sticky.
Prepare the cream. Use soft room-temperature butter, add powdered sugar, and beat for 2–3 minutes until light and fluffy. Add cold cream cheese and beat for another 1–2 minutes until smooth and creamy. Transfer the cream to a piping bag if desired (a spoon works too).
Divide the dough into 8 equal parts and shape the cookies as shown in the video. Bake in a preheated oven at 180°C (350°F) for 13 minutes.
Right after baking, the cookies will be very soft and may seem underbaked — that’s normal. The goal is to keep the centers moist like brownies. Let the cookies cool completely, spread cream on one half, and cover with the second half.
