How to make Chicken Adobo : Recipe for Filipino food favorite

I've been wanting to try the Filipino dish adobo for quite a while now -- mostly because so many of you guys have commented that it's a dish that I should try!
Lucky for me, my buddy Dave is Filipino and has his mom's amazing recipe that he shares with all of us! The flavor profile of this dish (and many dishes in Filipino cuisine) is salty and sour. You guys, this is so good you'll want to lick your plate clean!!
Here's how you make it:
-4-6 chicken legs and thighs, cut up (about 2 pounds)
-1/4 cup of kikoman soy sauce
-1/2 cup vinegar
-7-8 cloves of garlic
-nub of ginger
-1-2 bay leaves
a bit of water (about 1/2 cup)
-1-2 Tablespoons of vegetable oil
-1-2 Tablespoons of brown sugar
-optional: whole peppercorns
Sauté garlic and ginger in a pot with oil. Mix brown sugar, vinegar and soy sauce together in a bowl. Add to the pot and bring to a simmer. Add a bit of water -- 1/2 cup to 1 cup -- to dilute it a bit.
Add chicken pieces and stir so that all of the chicken gets completely covered in the sauce and bring to simmer. Turn off fire and let sit for 30 mins.
After the 30 minutes are up, turn on fire and cook for another 1-1/2 hours, stirring often. Add additional ingredients depending on your palette (sour, sweet, salty, etc). Sour and salty is the general palette. Sauce should have a thicker, shinier finish from the caramelization of the sugar.
When it's ready, serve it over rice and ENJOY!! :)
