~For the Cake~
6 eggs
1 box white cake mix
½ cup water
¼ cup oil (I used vegetable)
½ cup powdered sugar

~For the Filling~
1 jar, 7 oz marshmallow creme
¾ cup butter, softened
1 tsp vanilla extract
1 ½ cups powdered sugar

~For the Coating~
24 oz white chocolate
2 Tbsp oil

~For the Tree Trimmings~
green sugar sprinkles
Red cookie icing pouch

Preheat oven to 375 degrees F. Line bottoms of two cookie sheets (18×13-inch) with parchment paper. Spray parchment paper with cooking spray.
In a large bowl, beat eggs with an electric mixer on high speed for 6 minutes.
Add cake mix, powdered sugar, water, and oil and combine.
Measure out about 2 1/4 cups of batter into each pan and spread evenly.
Bake 10-12 minutes and allow to cool completely.
Use a 3-4-inch Christmas tree cookie cutter to cut out your shapes.
For the filling, beat marshmallow creme, softened butter, vanilla and powdered sugar with an electric mixer until smooth and creamy.
Spoon the filling into a piping bag plastic baggie and snip off the tip. Pipe frosting on one tree and put a second tree on top of the frosting. Repeat for all other Christmas trees.
Place the Christmas Trees into the freezer for two hours or more until frozen.
Melt the white chocolate over a double boiler (or microwave) until smooth and stir in oil.
Dip each frozen cake into the white chocolate, spooning the chocolate over the cake to cover completely. Use forks to remove the trees from the chocolate, place on a parchment lined cookie sheet, and sprinkle the green sugar sprinkles over each cake. Allow to dry completely.
When dry, snip off the tip of the red cookie frosting and drizzle stripes over each cake.
