Hello Everyone, This is a simple no fuss pastry that uses by second favorite fruit. It goes great with ice cream or frozen yogurt.
FOR THE CRUST:
1-1/4 Cups Unbleached All Purpose Flour
2 Tablespoons Sugar
1/4 Teaspoon Salt
1/2 Cup Chilled Unsalted Butter, cut into 1/2-inch cubes
2-3 Tablespoons Ice Water
start with 2 Tablespoons, add more water by teaspoons if too dry
FOR THE FILLING:
Mix - (1 Tablespoon Flour with 1 Tablespoon Sugar)
1-1/2 POUNDS PLUMS, halved, pitted, each half cut into 6
4 Tablespoons Sugar
1/2 Teaspoon Ground Ginger
1/4 Teaspoon Ground Cinnamon
2 Tablespoons Unsalted Butter, melted
1 Egg, beaten for glaze
1 Tablespoon Sugar for sprinkling
1/4 Cup Apricot Preserves
