Home made Potato Chips (and freezing instructions)

Ingredients:
• 4 large golden delight potatoes
• 2 Tablespoons olive oil
• Your choice of seasoning/spices
Method:
1. Wash and peel the potatoes. Cut the potatoes into chip shapes, about 1 cm thick.
2. Add the chips to a large bowl and cover with cold water. Allow them to soak for at least 30 minutes but they can soak for as long as overnight. (Place in the fridge if soaking more than an hour).
3. While fries are soaking, put the oil and seasoning/spices in a small bowl. Mix.
4. After the fries have soaked, drain, rinse, and lay the fries on a paper towel lined cooling rack to dry while you preheat the oven to 200 degrees.
5. Line a baking pan with parchment paper or foil and spray with non-stick spray. Make sure the previously used bowl is dry and add the potatoes to it, add the oil and seasoning mixture. Toss around to mix.
6. Evenly line the baking pan with the fries in a single layer. Don’t overlap or the chips won’t cook properly. Bake for 45 minutes.
Seasoning Suggestions:
• Garlic, rosemary, salt
• Garlic powder, onion powder, paprika, salt
• Chilli powder, paprika, parmesan cheese
• Rosemary, salt, feta & aioli
ProTip for cheese: sprinkle chips with cheese and then return to hot oven for one minute. This makes the cheese stick.
ProTip for freezing: bake chips in oven for half an hour at 180. Put in brown paper bag and seal with glad wrap. To serve, put frozen chips in oven in a single layer at 200 for half an hour.
