🧂재료:
생닭(10호)---1마리
대파--- 2대
청양고추--- 4개
홍고추--- 1개
당근--- 1/3개
양파--- 1개
감자 ---1개
무우---1/3통
고춧가루--- 7큰술
고추장---1큰술
진간장--- 3큰술
설탕--- 1큰술
물엿---1큰술
다진마늘--- 1큰술
카레가루---1.5큰술
새우젓국물---1큰술
생강가루---1/2큰술
후춧가루 약간
👩🏻🍳 조리순서
1. 닭을 깨끗이 헹구고 내장같은것도 다떼어냅니다
2. 밀가루물에 헹구어줍니다(잡내제거)
3. 대파2뿌리 5센티로 썰어주고 당근과 앙파도 큼직하게 썰어줍니다
4. 청양고추도 듬성썰어줍니다.
5. 감자나 무도 숭숭 썰어줍니다
6. 양념장을 만듭니다 고춧가루3큰술,새우젓국물1/2큰술,,진강장3큰술,간마늘1큰술, 미림2큰술,생강가루1/2큰술,고추장1큰술,설탕1스푼,카레가루1.5큰술,물엿1큰술,청양고추2개,양파넣고 5분끓입니다
7. 식용유2큰술넣고 고추기름내어줍니다(고춧가루4스푼)약불
8. 거기에 물4큰술넣고,대파1뿌리넣고 볶아줍니다
9. 2분정도볶은후에 닭을넣고 볶아줍니다
10. 감자와 당근도 같이넣고 볶아줍니다
11. 물한컵반을넣고 저어주고 중불로15분끓여줍니다
12. 대파,양파,고추를 넣고 5분정도 더 끓여줍니다
📋 Ingredients
1 whole chicken (size 10, approx. 1.2kg)
2 green onions
4 spicy green chilies
1 red chili
1/3 carrot
1 onion
1 potato
1/3 Korean radish
7 tbsp red pepper powder (gochugaru)
1 tbsp red pepper paste (gochujang)
3 tbsp soy sauce
1 tbsp sugar
1 tbsp starch syrup (or corn syrup)
1 tbsp minced garlic
1.5 tbsp curry powder
1 tbsp fermented shrimp brine
1/2 tbsp ground ginger
Black pepper to taste
🥘 Cooking Instructions
Clean the chicken thoroughly, removing any leftover guts.
Rinse the chicken in flour water to eliminate any unwanted smell.
Cut green onions into 5cm pieces. Chop carrots and onions into large chunks.
Slice the green and red chilies roughly.
Chop potatoes and radish into thick chunks.
Make the sauce: Combine 3 tbsp red pepper powder, 1/2 tbsp fermented shrimp brine, 3 tbsp soy sauce, 1 tbsp minced garlic, 2 tbsp cooking wine, 1/2 tbsp ground ginger, 1 tbsp gochujang, 1 tbsp sugar, 1.5 tbsp curry powder, 1 tbsp syrup, 2 chopped chilies, and chopped onions. Simmer for 5 minutes.
In a pan, heat 2 tbsp oil and stir-fry 4 tbsp red pepper powder on low heat to make chili oil.
Add 4 tbsp water and 1 green onion, then stir-fry briefly.
Add chicken and stir-fry together.
Add potatoes and carrots, stir-fry again.
Pour in 1.5 cups water, mix, and simmer on medium heat for 15 minutes.
Add remaining green onions, onion slices, and chilies. Simmer another 5 minutes.
