Learn how to make Soft and delicious Basen ki roti at home made easy.
Missi Roti is a traditional Punjabi (Indian - Pakistani) flatbread made from a mixture of whole wheat flour and gram flour (besan), flavored with spices like and herbs. It has a nutty, slightly crisp texture and is rich in protein, making it a healthy and flavorful alternative to plain roti. Commonly served with curries, pickles, or yogurt, it’s a staple in many North Indian and Pakistani Punjab households.

Ingredients:
.
Gram Flour 02 cups
Whole wheat flour 01 cup
Onion (chopped) 01 medium
Fresh corriander (finely chopped) 03 tbsp
Mint (chopped finely) 02 tbsp
Green chillies (chopped) 02
Salt 1 tbsp or to taste
Oil 3 tbsp
Red chili crushed 1tbsp
Cumin seeds 1 tbsp
Coriander seeds (crushed) 1tbsp
Ginger & Garlic paste 1 tbsp
Water (lukewarm) 03 cups or as required
Cooking oil for oiling

Directions:

1. In a bowl, add the flours, all herbs, spices and oil. Dry mix all ingredients and press while mixing with hands.

2. Add lukewarm water. Now combine water and flour mixture with hand.
3. Gradually add water to the flour to maintain consistency.
4. Knead and fold repeatedly to make a smooth dough.
5. Apply oil to hands to prevent dough stick to your hands.
6. Now cover the dough mixture and let it rest for 30 minutes.
7. Again repeat the kneading and folding until smooth dough is formed.
8. Use the dough after 15 minutes to make roti or paratha or refrigerate it in an airtight container.
9. Make dough ball and dust with flour.

10. Spread it out with hands first and then with the help of rolling pin to approximate size of 9" plate.

11. Now when the pan is pre-heated on medium flame for 10 minutes, place the paratha on the pan.

12. Half cook one side and then flip it.
.
13. Add oil and spread evenly. Repeat the same process on the other side.
.
14. When both sides are golden brown take it off. Serve with yogurt or tea and enjoy!
