INGREDIENTS:
Cake:
˙ 125 g butter
˙ lemon extract
˙ 230 g sugar
˙ 2 eggs
˙ 50 ml milk
˙ 3 tbsp yogurt
˙ 170 g flour
˙ pinch of salt
˙ 1 tsp cinnamon
˙ pinch of anise
˙ 2 tsp baking powder
˙ 100 g ground almonds

Frosting:
˙ 345 g white chocolate ( melted )
˙ 150 g cream cheese
˙ 450 g mascarpone
˙ lemon extract


˙ Bake at 180°C / 360°F
Around 20 minutes ( always check )
Please don’t forget to check while baking, as you may need a shorter or longer time to bake. This is on the oven without ventilation on!

˙ I was using 6-inch (15 cm) springform pans!

This Lemon Berry Cake is so light and refreshing! Combination of lemon, berries and mascarpone cheese is perfect. You can use berries of your choice, I like to cut them into small pieces so when I cut the cake berries don't fall out. You can decorate however you want, I sprinkled it with coconut.
