Looking for a simple, healthy, and protein-rich South Indian side dish? 🌿
Try this delicious Beans Paruppu Usili.
Ingredients:
1 cup finely chopped beans
½ cup chana dal (soaked)
½ cup moong dal (soaked)
1 tbsp oil (for cooking beans)
3 tbsp oil (for tempering)
½ tsp mustard seeds
1 tsp chana dal
1 tsp urad dal
2–3 dried red chillies
curry leaves
¼ tsp turmeric powder
Salt to taste
Little water (to cook beans)
Recipe:
Heat 1 tbsp oil in a pan, add chopped beans and salt. Sauté on high flame for 1 minute.
Add a little water and turmeric powder, mix and cover. Cook for 2–3 minutes until slightly soft. Keep aside.
Grind soaked chana dal and moong dal with salt and dry red chillies coarsely without adding water.
Heat 2 tbsp oil in a pan. Add mustard seeds, chana dal, urad dal, curry leaves, and dry red chillies.
Add the ground dal mixture and a little turmeric powder. Cook while stirring continuously until the mixture becomes crumbly.
Add the cooked beans, adjust salt, and mix well. Cook for 1 minute.
Beans Paruppu Usili is ready! Serve hot with rasam rice or sambar rice.
