Coconut Paradise Drink by Queen of Cocktails Stacy Garrett & Author Christine Wellert

Christine Wellert is the author of multiple amazing books that will have you laughing, wondering and not wanting to put them down. The second book in her Summer Jenkins Mystery is called Waikoloa Warfare, a murder mystery set on the Big Island of Hawaii with all kinds of wonderful references to familiar places on the island.

During the book the group enjoys a lovely cocktail and because Christine is amazing, she included the recipe in the back of the book. So I had no choice but to have her over to make it and enjoy together.

Full recipe here:
6 ounces Spiced Rum (we actually used coconut rum)
4 ounces Cream of Coconut (some for rim and 3 ounces for the cocktail)
3 ounces Lime Juice (fresh is best but do what you can)
3 ounces Coconut Milk
2 ounces Triple Sec
Sweetened Coconut Flakes (for the rim of her drink but not mine thank you)

Put some of the coconut cream on a plate and a handful of the coconut flakes on a different plate. Dip the rim of your glass in the coconut cream and then the coconut flakes for a beautiful presentation.

Fill your cups half full with ice.

Then, mix all ingredients in a cocktail shaker with ice. Shake what your mama gave you for 29 shakes (approximately 30 seconds) until contents are thoroughly mixed and chilled. Pour into your glasses, makes 3 cocktails or 2 rather large ones.
