Restaurant Style Mushroom Lababdar

INGREDIENTS
Oil - 2 teaspoons
Onions - 120 grams
Tomato - 120 grams
Cashews - 2 tablespoons
Garlic - 1 teaspoon
Ginger - 1 teaspoon
Coriander stems - 2 tablespoons
Green chili - 1 tablespoon
Water - 180 milliliters
Mushrooms - 350 grams
Yogurt - 80 grams
Ginger garlic paste - 1 teaspoon
Salt - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Dry fenugreek leaves - 1 teaspoon
Garam masala - 1 teaspoon
Mustard oil - 2 tablespoons
Oil - 2 tablespoons
Bay leaf - 1
Cinnamon stick - 1
Cloves - 2 pods
Green cardamom - 2 pods
Black peppercorns - 1/8 teaspoon
Mace flower - 1/2 teaspoon
Ginger - 1 teaspoon
Garlic - 1 teaspoon
Green chili - 1 teaspoon
Onions - 80 grams
Salt - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Paprika - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Milk - 50 milliliters
Fresh cream - 50 grams
Dry fenugreek leaves - 1/2 teaspoon
Coriander - 1 tablespoon
Fresh cream - for garnishing

PREPARATION
1. Heat 2 teaspoons oil in a hevay skillet, add 120 grams onions, 120 grams tomato, 2 tablespoons cashews, 1 teaspoon garlic, 1 teaspoon ginger, 2 tablespoons coriander stems, 1 tablespoon green chili and cook for 2 - 3 minutes.
2. Add 180 milliliters water and cook for 3 - 4 minutes.
3. Cover it with lid and cook for 2 - 3 minutes.
4. Open the lid and remove it from heat. Cool for 5 minutes.
5. Transfer, this into a blender and blend it well.
6. In a bowl, add 350 grams mushrooms, 80 grams yogurt, 1 teaspoon ginger garlic paste, 1/2 teaspoon salt, 1/4 teaspoon turmeric, 1 teaspoon dry fenugreek leaves, 1 teaspoon garam masala and mix it well. Marinate for 20 minutes.
7. Heat 2 tablespoons mustard oil in heavy skillet, add marinated mushroom and cook for 5 - 7 minutes. Remove it from heat.
8. Heat 2 tablespoons oil in a heavy skillet, add 1 bay leaf, 1 cinnamon stick, 2 pods cloves, 2 pods green cardamom, 1/8 teaspoon black peppercorns, 1/2 teaspoon mace flower, 1 teaspoon ginger, 1 teaspoon garlic, 1 teaspoon green chili and stir well.
9. Add 80 grams onions and cook for 3 - 4 minutes.
10. Add blended mixture, 1/2 teaspoon salt, 1/4 teaspoon turmeric, 1/2 teaspoon paprika, 1/2 teaspoon garam masala and cook for 5 - 7 minutes.
11. Add 50 milliliters milk, 50 grams fresh cream and cook for 2 - 3 minutes.
12. Add prepared mushrooms and cook for 5 minutes.
13. Add 1/2 teaspoon dry fenugreek leaves, 1 tablespoon coriander and cook for 2 - 3 minutes. Remove it from heat.
14. Garnish with fresh cream and coriander.
15. Serve hot.
