✅Ingredients:
•Amla (Indian gooseberry) 500 g
•Mustard seeds (rai dana) 2 tbsp
•Cumin seeds (jeera)1 tbsp
•Coriander seeds 1 tbsp
•Fenugreek (methi dana) 1/2 tbsp
•Fennel seeds (saunf) 1 tbsp
•Mustard oil 1/2 cup
•Turmeric powder 1 tbsp
•Kashmiri lal mirch powder 2 tbsp
•Amchoor (Dry mango powder) 1 tbsp
•Hing 1 tsp
•Green chilli (as needed )
•Salt 2-3 tbsp
1) First, steam the amla for 10–15 minutes or until it becomes soft.
2) Let the amla cool down, then remove the seeds.
3) Dry roast mustard seeds, cumin seeds, coriander seeds, fenugreek seeds, and fennel seeds on low flame for 2–3 minutes until aromatic.
4) Let the spices cool, then grind them coarsely.
5) Heat ½ cup mustard oil until it starts smoking.
6) Turn off the flame and let the oil cool down, then add the ground spices.
7) Add turmeric powder, Kashmiri red chilli powder, dry mango powder, and asafoetida, and mix well.
8) Now add boiled amla, green chillies, and salt, and mix everything properly.
9) Rest it for 10 minutes, mix again, and store in a clean glass jar. You can use this pickle for 2–3 months.
