In 2019, Khachapuri was given the status of Intangible Cultural Heritage of Georgia. It is very popular in restaurants and as street food. It is Georgia's National dish. Every February 27th, people celebrate this day as National Khachapuri Day, to celebrate Georgia's signature pastry as well as to promote its recognition internationally (Wikipedia).
Ingredients:
2 cups warm milk
2/3 cup warm water
4 tsp active dry yeast
3 tbsp sugar
4 tsp olive oil
4 cups All Purpose Flour
3 tsp kosher salt
*4 eggs
*some fine salt for the egg
*2 tbsp butter
Cheese blend:
32 oz Mozzarella cheese
32 oz Feta cheese
32 oz Cheddar cheese
