5 large eggs
2 egg yolks

1 tsp chocolate extract (you can substitute with 1 tsp pure vanilla extract)
Bake @ 350F (25-30mins)
SHORTBREAD CRUST
70g granulated sugar
zest of 1 lemon
140g butter
210g all purpose flour
1 egg
1/2 tsp pure vanilla extract
Chill for at least 30 mins
Bake for 20-25mins until edges turn golden
CHERRY SIMPLE SYRUP
50g cherries
1/2 cup water
1/2 cup sugar
CHERRY FILLING
177g cherries
60g water
25g sugar
1/2 tsp ground cinnamon
1/2 tsp salt
6g cornstarch
30g water
STABILIZED WHIPPED CREAM
650g whipping cream
40g granulated sugar
8g powdered gelatin
60g water
30g granulated sugar
CHOCOLATE SHAVINGS
1 bar of dark chocolate
EXTRA
