Kanten Jelly Recipe
1 stick kanten
2 cups water
½ cup sugar
1 teaspoon rose water
Break the stick kanten in half so it fits into a medium pot. Pour water into the pot and soak the kanten to rehydrate, about 15–30 minutes.
Once the kanten is soft, tear it into small chunks. Bring it to a boil over medium heat. Lower the heat and stir constantly with a rubber spatula until the kanten is completely melted, about 5 minutes.
Strain the melted kanten through a mesh sieve into a heatproof container. Kanten will solidify at room temperature, but you can chill it in the fridge to speed up the process.
Once set, cut the kanten into bite sized pieces.
