Coconut-Lemon Bundt Cake:
1 2/3 cups granulated sugar
2/3 cup canola oil
1 (14oz) can coconut milk
1/4 cup rice/soy milk
1/4 cup lemon juice
3 tbsp finely grated lemon zest
2 tsp pure vanilla extract
3 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/2 cups shredded unsweetened coconut
a few tbsps confectioner's sugar for sprinkling
