Описание: This is a delicious vegetable stew traditionally made at the end of the gardening season to use up vegetables. You can use any vegetables you have and it always comes out great. You can even add in meat like pepperoni or sausage if you wish.

Ciambotta (or Giambotta)
(Makes 4-6 servings)

Ingredients
(This will vary depending on what you have at hand)
1 eggplant peeled and cut into cubes
2 small zucchini cut into cubes
2 red bell peppers
2 green bell peppers
1 large onion cut into pieces
2 Russet potatoes peeled and cut into cubes
4 cloves of garlic chopped
1/2 lb fresh string beans
4 large tomatoes cut into pieces
1/4 cup chopped basil
Olive oil
Salt and pepper to taste

Directions
Heat a large deep pan
Coat the bottom of the pan with olive oil
Sauté onion, then add garlic
Add potatoes and cook for about 5 minutes until they become a little browned
Add all other ingredients and cook down, stirring occasionally, keep the pan covered
Add more olive oil as needed, vegetables will absorb the oil
Add tomatoes, basil and salt and pepper
Continue to cook covered stirring occasionally until all ingredients are soft and juices are released
Serve with Italian bread

Note- this dish keeps well and tastes better the next day
You may adjust add or omit any vegetables you like
