1400G PORK RIBS
1 MEDIUM ONION
2 CLOVES OF MINCED GARLIC
6 CLOVES ( POUNDED)
2 TSP SALT
2 TBSP VINEGAR
2 TBSP COOKING OIL
1 1/2 TSP CHICKEN STOCK POWDER
1000ML HOT WATER
5 TBSP FLOUR
2 TBSP TOMATO PASTE
2 TBSP CARIBBEAN JERK BBQ SAUCE
1/2 TSP BLACK PEPPER
1 TSP SMOKED PAPRIKA
-POUND THE CLOVES AND KEEP THEM ASIDE, DICE THE ONION AND CRUSH THE GARLIC, THEREAFTER KEEP THEM
ASIDE.
-ADD 1 TSP OF SALT TO THE RIBS AND THE VINEGAR, MIX WELL AND LET IT SIT ON THE SIDE FOR 10 MINUTES,THIS
WILL HELP TENDERIZE THE MEAT AND GIVE IT A WONDERFUL FLAVOR, AFTER THAT COAT THE MEAT WITH THE
FLOUR SHAKE OFF THE EXCESS FLOUR AND PUT ON A PLATE.
-IN A BIG PAN PUT OIL HEAT ON MEDIUM UNTIL HOT, ADD THE MEAT AND BROWN IT ON ALL SIDES, IT
TAKES ABOUT 20 MINUTES, REMOVE FROM THE PAN, DEGLAZE THE PAN WITH A BIT OF WATER, THEN ADD THE
ONION AND THE GARLIC, STIR AND LET IT COOK FOR 3 MINUTES, ADD THE CLOVES, JERK BBQ SAUCE, TOMATO PASTE, BLACK PEPPER, CHICKEN STOCK, SMOKED PAPRIKA, MIX AND COOK FOR 3 MINUTES, ADD THE RIBS, HOT WATER, 1 TSP SALT, STIR COVER AND COOK FOR 80 MINUTES,ON MEDIUM-LOW HEAT STIR EVERY NOW AND THEN, AFTER 80 MINUTES THE MEAT SHOULD BE TENDER, TURN OFF THE HEAT AND REMOVE FROM THE STOVE, SERVE WITH STEWED GREEN BEANS AND PARMESAN MASHED POTATOES, ENJOY.
