Butter Chicken (Murgh Makhani)
This classic Indian dish features tender chicken in a creamy, spiced tomato sauce.
Ingredients
Chicken: 800g thighs, bite-sized.
Marinade: 1/2 cup yogurt, 1 tbsp ginger-garlic paste, 1 tbsp garam masala, 1 tsp turmeric, 1 tsp chili powder.
Sauce: 2 tbsp butter, 1 cup tomato puree, 1 cup heavy cream, 1 tbsp sugar, 1 tsp dried fenugreek leaves (kasuri methi).
Aromatics: 1 onion (finely chopped), 1 tbsp ginger-garlic paste.
Steps
Marinate: Mix chicken with marinade ingredients. Refrigerate for at least 30 minutes.
Sear: Brown the chicken in a large pan over medium-high heat. Remove and set aside.
Sauté: Melt butter in the same pan. Sauté onions until translucent, then add ginger-garlic paste.
Simmer: Stir in tomato puree and spices. Cook for 10 minutes until thickened.
Finish: Stir in cream, sugar, and cooked chicken. Simmer for 5 minutes.
Garnish: Crush fenugreek leaves over the top and serve with naan or basmati rice
