This vegetarian Quesadilla is filled with lots of vegetables, fresh spices and cheese. Hope you enjoy it!!
🍅MEXICAN QUESADILLA RECIPE🍅
🌶Ingredients for stuffing:🌶
1 - 2 tbsp oil
2 -3 garlic cloves - grated
1 medium onion - finely chopped
1 small green chilli - finely chopped
1 fresh jalapeño chilli - finely chopped
1 - 2 tbsp concentrated tomato puree
½ tsp chilli flakes (or chilli powder or smoked paprika)
Salt to taste
½ tsp black pepper powder
1 tin (400gm) cooked red kidney beans - 240gm drained weight (or black beans or mixed beans)
4 - 6 tbsp water (add more if needed)
½ green pepper - cut in to small cubes
½ red pepper - cut in to small cubes (or any colour peppers)
2 tbsp sweetcorn
2 tbsp spring onions - finely chopped
1 tsp mixed herbs
*roasted cumin powder (optional)
*You can adjust the quantity of the ingredients per your taste.
🌶Ingredients for Quesadilla:🌶
4 large size tortillas
1 cup chadder cheese
1 cup Mexicana cheese
*you can use mozzarella or any cheese of your choice
Accompaniments:
Salsa and Guacamole (recipe links below)
or sour cream

🌶Method for stuffing:🌶
Heat 1 to 2 tbsp oil in the panand add 2 to 3 cloves of grated garlic.
Sauté for 20 seconds on a low heat and add 1 finely chopped medium onion.
Cook onions for 3 to 4 mins on a medium heat untill they are transparent. Keep stirring.
Add 1 finely chopped small green chilli and jalapeño chilli. Cook for 30 seconds and add 1 to 2 tbsp concentrated tomato puree. Mix well.
Add ½ tsp chilli flakes, salt to taste, ½ tsp black pepper powder and cook for 30 seconds then add drained kidney beans.
Cook for 2 mins. Add 4 - 6 tbsp water (add more if needed) and cook for 2 mins.
Mash them coarsely and mix well. Add ½ green pepper and ½ red pepper, 2 tbsp sweetcorn, 2 tbsp finely chopped spring onions and 1 tsp mixed herbs.
Mix all the ingredients well and adjust seasoning and consistency.
Transfer in a plate to slightly cool down.

🌶Method for Quesadilla:🌶
This will make 4 Quesadillas.
Heat a pan on low/medium heat and place a tortilla and lightly brush with olive oil and turn it over.
Spread ¼ part chadder cheese in half of the tortilla, ¼ part stuffing and then ¼ part Mexicana cheese.
Fold the other side over this and press it.
Brush with oil. Turn and brush the other side with oil.
Cook until slightly brown and crispy on both sides and cheese is melted.
Transfer on a plate and cut the Quesadilla in half or 3 parts.
Serve immediately with Salsa and Guacamole (recipes in the description box)
